Recipe Review - Potato Salad

Linda Larsen: "My Mother's Potato Salad"

Linda Larsen is an author, journalist, and home economist who has worked for Pillsbury and Malt-O-Meal. She is also a food guide at www.about.com where she shares this recipe. It is her mother's recipe and her favorite...my favorite too.


Here's what you'll need:Potatoes, Onion, Celery, Salt, Pepper, Mustard, Miracle Whip, Mayonnaise, (and milk, not pictured).



To begin, boil or steam potatoes (either whole or in chunks), and cook until fork tender.



 Set aside to cool.




While potatoes are cooking, chop celery and onion...while Wilson looks on. Do you remember what movie Wilson starred in? Here's a hint: starred Tom Hanks




Whisk together mayonnaise, miracle whip, mustard, salt, pepper, & milk.










Add diced celery and onion to cooled potatoes.




Place dollops of mayonnaise mixture on top of veggies and stir gently with large spoon.










Place in serving dish and top with sprinkling of sliced onions.


Obviously, there are many ways to change or add-to this recipe. The only change I made from her original was to leave out the radishes and omit the boiled eggs for garnish.
